Autumn Rice with Artichoke

Terrific combination that will make you feel satisfied and happy! 

What you need:

2 cups basmati rice
3 cups filtered water
Salt to taste
2 tbs cumin seeds
1 spoon turmeric
1 jar of cooked artichoke hearts
1 handful chopped parsley or coriander or a mix of them 
3 spoons avocado oil

What to do:

Warm the avocado oil in a wide pot and add the rice, salt, turmeric and cumin seeds. Add the water and let boil, covered. 
When boil, lower the heat and cook half covered until there are no more water in the pot. Then turn off the heat and leave the pot covered for 5 more minutes.

Mix the rice with the artichoke hearts and the parsley and cook on a very low heat for five more minutes. Mix well.
