Kale & Arugula Salad

This salad may not be as beautiful as others, but believe me - it's super yummy and so healthy! 

 

What you need:

1 cup kale, chopped (organic if possible, no stems)
1 cup arugula leaves
1 cup red leaf lettuce (or any lettuce you like. Organic is always better!)
10 cherrie tomatoes, cut to small slices
2 small radishes, sliced
1/4 cup beet, cut to small cubes
3 large cauliflower florets; use a blender to make small cauliflower flakes 
1/2 red pepper, chopped

For the dressing:

1 spoon whole tahini
Juice of 1 large lemon
Salt to taste
1 tbs maple syrup (more or less as per how sweet would you like it to be)

What to do:

Mix all the ingredients in a bowl and add the dressing on top. Mix well and enjoy :-)
