Super Healthy Summer Salad

This salad has 2 versions: the basic, which you can stay with, or the full version with all kinds of yummy additions. This way or another, it's super healthy and delicious!

 What you need:

For the basic version:

1 cup chopped kale leaves
1 handful chopped coriander
1 handful chopped parsley
1 chopped small cucumber
Fresh herbs mix: chopped basil leaves, oregano and mint (less than handful for all of them)
1 chopped red pepper

For the full version, add:

1 sliced ripe avocado
1/2 cup cherrie tomatoes, cut to half
2-3 cauliflower florets, blended in a blender or food processor until you get nice little cauliflower flakes

For the dressing:


Salt to taste
Juice of 1 large lemon (fresh only)
1 tbs maple syrup (100%, no sugar added or preservatives)

What to do:

Blend all the salad ingredients in a bowl. Add the dressing ingredients on top and mix it all. I massage the avocado into the greens! It's the best taste.
