Zoodles with vegan 'cheese'

After this salad, you will stop looking for any other noodles or cheese :-) this one is tsimply amazing!

What you need:

For the salad:

1 large zucchini, sliced pasta-style in a spiralizer
1 handful chopped parsley
2 small chopped radishes 
1 cup cooked edamame (cook from frozen according to the instructions on the package)
2 small chopped cucumbers 
2 green onions, only the green part, chopped
1/2 cup cherrie tomatoes, cut to half
Chopped fresh herbs such as oregano, basil, mint (I used all the three)
4 cauliflower florets
Juice of 1 lemon
Salt to taste

For the dressing:

1 spoon tahini
1/2 cup filtered water
1 chopped garlic clove
Salt to taste

What to do:

Blend all the salad ingredients in a bowl, except the cauliflower.

Blend the cauliflower in a strong blender until you get nice little cauliflower flakes (be careful not to blend too much! you may get a cauliflower paste...). Add them on top of your salad. 

Blend all the dressing ingredients in a different ball. Mix well before pouring the dressing on top of the salad. 

Mix all and enjoy!
