Zoodles Salad with vegan 'cheese'

What a healthy, delicious version of this great salad! You may play with the quantities - after all, it's a salad! You may make it sweeter or less sweet, more salty or without salt at all - just the way you like it :-)

 


 

What you need:

1 large zucchini, sliced in a noodles slicer

1 small cucumber, chopped to tiny cubes
1/2 red pepper, chopped to tiny cubes
A mix of 5 mint leaves, 5 basil leaves and 10 oregano leaves: all chopped to tiny pieces
4 Cauliflower florets, either grated or blended in the blender until you get a nice cauliflower flakes

For the dressing:

1 spoon almond butter
1/2 tbs sesame oil
1 spoon soy sauce (reduced sodium please!)
Salt to taste
1 tbs maple syrup

What to do:

First blend all the salad ingredients in a large bowl. Then blend the dressing ingredients in a smaller bowl.

Mix the dressing with the salad until all is covered with yummy dressing!
