Gluten Free Recipe: Yellow Rice with Edamame

A great lunch Idea with an amazing anti-inflammatory (turmeric) and protein (edamame)!

What you need:

2 cups basmati rice (better whole rice)
1 spoon turmeric
1 cup frozen edamame (non-GMO), cooked according to the instructions on the package (basically cook in boil water until it's done and then peel them out)
1 spoon avocado or coconut oil
2 cups filtered water
Salt to taste

What to do:

Warm the oil in a wide pot and add the rice with the salt and the turmeric. Mix for a minute and add the water. Cover the pot.

When the water are boiling, reduce the heat and leave half covered until the water are almost gone. Then cover completely and leave for 5 minutes.

Add the edamame to the rice and mix.
