This recipe is a winner! It is good also for people that usually doesn’t like to eat carrots, as it is so delicious!
What you need:
For the salad:
About 4-5 thinly sliced organic carrots (very thin!)
1 cup pecan, chopped well in a food processor
1 cup raisins or cranberries (make sure that there is no added sugar or preservatives)
3 handful chopped organic coriander or parsley
For the sauce:
1/4 cup fresh lemon juice
2 spoons maple syrup
1/4 cup vegan mayo or canola oil
salt to taste
What to do:
Blend all the salad ingredients together in a bowl.
Blend all the sauce ingredients in a bowl. Mix well.
Pour the sauce into the salad, mix well and put in the fridge for about an hour.
