TOFU SPREAD

When I was a child, one of my favorite salads was…chopped liver salad. I remember that my mom used to tell us how healthy it is since it has lots of iron in it. What my mom didn’t know is that this iron is coming with a large amount of toxins and lots of suffering energy, and is very dangerous to our health.
 

Becoming vegan made me give up and forget this salad for good, of course. So you can imagine my joy when i found myself in a vegetarian restaurant in Prague, ordering a tofu spread, finding out that this spread taste very similar to the chopped liver salad, way way healthier and include zero meat in it! It was an amazing surprise, and I was very disappointed when the waitress refused to share the recipe with me, claiming that “it’s a secret”. I almost had tears in my eyes… I promised her that I’m from Canada, just a tourist, and will never sell the recipe to the restaurant next door, but that didn’t help.
 

…Until after we finished eating, a nice young guy came and introduce himself as the chef. He was an Israeli guy who lives in Prague, and was very happy to share the recipe with me!
 

Regards the quantities: this spread is what I call “forgiving” or “adjustable”. You can try the whole thing without the miso paste, or add more cashews for thickness. The main thing here is the combination of the carmelized onions with the tofu, and you work around it.
 

What you need:

* 2 large onions, peeled and cut
* 1 spoon miso paste (look for the non-gmo version)
* 1 pack soft tofu, cut to cubes
* 1/2 cup raw cashew
* handful dill
* 2 spoons olive oil
* 1-2 spoons of soy sauce (reduced sodium)

 

What to do:

* Use the olive oil to fry the onion until caramelized (leave on a low heat for about 10 minutes)
* Put the carmelized onion in a blender with the rest of the ingredients and mix until smooth.
* Put in the fridge until cold.

 

You may garnish with anything color: parsley, olives, tomato. Be creative!
