There are plenty of words that I can write here about kale, arugula and quinoa, and also about turmeric, tomatoes and avocado. This salad is super packed with super foods!!!

What you need:

For the quinoa:
1 cup quinoa
1 tbs powdered Turmeric
2 cups water
Salt to taste


For the salad:
1 ripe tomato, chopped to small cubes
1 Handful copped kale, no stems (see if you can chop the kale to tiny pieces; you might like it better this way!)
1 handful arugula leaves
1 cup chopped red cabbage
1/2  avocado
Fresh juice of 1 lemon
Salt to taste

For the sauce:
1-2 ripe tomatoes (depends on how you like your sauce)
1/2  avocado



What to do:

First, cook the quinoa in a pot with 2 cups of water and the turmeric until boil. Then reduce the heat and let cook until there are no more water and the quinoa is ready. Let cool.

Making the salad is simple: you organize all the salad ingredients nicely in a plate or a bowl.

Blend the sauce ingredients in a blender and hop! You have an amazing super meal!!!
