What you need:
* 2 cups white rice
* 3 ripe tomatoes, chopped
* 1 large onion
* 3 cups water
* 1 spoon canola oil
* 2 spoons olive oil
* Pinch of green onion, chopped (for garnish)
* Salt to taste

What to do:
* Fry the onion in a pot to caramelize. Then add the tomatoes for another 2-3 minutes and add the rice and the salt. Fry for one minute.

* Add the water, stir, cover the pot and bring to boil. Then lower the heat, cover only part of the pot and cook for about 7-10 minutes or until there are no more water.Turn off the heat. Cover the pot completely and let rest for 5 minutes.Serving Idea: Fill small deep plate with rice and then turn it upside down on the serving plate to get a nice shape for the rice. Add chopped green onion on top for garnish.
