QUINOA WITH KALE SALAD

I’m sure you heard a lot about King Kale and queen quinoa! They are a great couple!

Kale is one of the healthiest vegetables around and a great way to be sure to enjoy the maximum nutrition and flavor from kale is to either add it to your salads or cook it.
Quinoa contains almost twice as much fiber as most other grains, and is rich in vitamins and minerals.

So here is a perfect combination of the two!
 

What you need:
 

For the quinoa:
1 cup organic quinoa
1 spoon of avocado or coconut or olive oil
Salt to taste

For the salad:
2 cups of organic Kale leaves, chopped, no stems
Optional: handful cilantro or coriander (or a mix of both), chopped well
1-2 tbs maple syrup (try one first, mix, taste, and see if you like to add a second tbs)
Salt to taste

 

What to do:

First, cook the quinoa:
In a wide pot, saute the quinoa in the oil for about a minute.
Add 1.5 cups of filtered water and let boil with a cover.
Reduce the heat and let cook with half cover until quinoa id ready and there are no more water.

Mix the rest of the ingredients in a bowl.
Let the quinoa cool before you add it to your salad mix.

Mix it all together and enjoy a wonderful taste!
