Quinoa can be very tasty – or not tasty at all. It’s really about how you are making it. Quinoa, very much like tofu, gets the taste of the sauce / spices that you add to it. And even then – some people likes it very much in one version (sweet, for example) and hate it in another. So before you make up your mind about quinoa – please try couple of versions of it!
This quinoa salad recipe is great for people who likes sour salads, because I used half lemon juice. It is simple to make, light, packed with protein and delicious!
What you need:
2 cups of cooked quinoa (room temperature)
1 red pepper
0.5 fresh lemon juice
1 tbs grounded coriander seed (spice)
10 fresh basil leaves, chopped well (leave some non-chopped for garnish!)
Salt to taste
What to do:
Mix all the ingredients in a bowl and garnish with fresh basil leaves.
