EGGPLANTS WITH VEGGIES – ASIAN RECIPE

If you like the asian cuisine, you will love this recipe! It’s sweet, and tasty, and has a great nutritional value!
 

What you need:

For the veggies mix:
2 eggplants, chopped to large pieces
5-6 Bok Choy (optional)
2 Celery sticks, chopped
1 Red pepper, sliced
350 grams tofu (large pieces)
4-5 Red chillies (optional)
10-15 Broccoli flowers
1 cup green beans
1 Carrot, sliced
1-2 Purple onions, sliced
1 Onion, sliced
3 garlic cloves, sliced thin
1 spoon avocado or coconut oil

 

For the sauce:

1/2 cup soy sauce (low sodium)
1/4 cup maple syrup (only if you don't suffer from high blood sugar)
Salt to taste

 

What to do:

Boil the avocado oil in a large pot and fry the eggplants until they are soft. Then add the red pepper, garlic and onions. Lower the heat.

Meanwhile, blend the sauce ingredients in a bowl.

When the veggies mix is soft, add the rest of the ingredients, and pour the sauce on top. Mix well.

Cook until everything is nice and tender.

Serve by itself or over rice.
