A delicious Mediterranean dish that has many versions. This one is very simple and super yummy! The good thing is that you don’t have to deep fry the eggplants!
Also, it is very healthy thanks to the tomatoes and eggplants. Going very well with any kind of rice or tofu.


What you need:

4 Tomatoes, chopped
1 onion, sliced
2 Eggplants, sliced
1 Tomato paste
1 spoon avocado or coconut oil
1/2 cup of water
Salt to taste


What to do:

* Place the eggplants in a baking tray. Add 2 spoons of olive oil on top. Bake for about 20 minutes (450 degrees) until soft.
* Remove from oven and set aside.
* Prepare the sauce: in a wide pan, saute the onion with 1 spoon of olive oil and salt. Add the tomatoes.
* Once the tomatoes are soft, add the tomatoes paste and the water.

When ready, pour the sauce on top of the eggplant and bake together for about 20 minutes (450 degrees).
