Someones once asked me if I don’t get bored with salads. The answer is a BIG NO!
I love salads and make my best to enrich them and always find new tastes and new combinations.


This is a basic green mix with the colorful addition of red pepper and sweet potatoes. The healthy advantages are endless, and the taste is soooo delicious!

‘Eat by colors’ is an important rule in any diet, but when you are vegan it’s even more important. Nature offers us a great variety of colors and tastes; most chances that after eating a lot of these meat will look like a pale boring option to you!


The salad:

* Mix greens (of all kinds) in a bowl as a base

The red peppers:

What you need:

* About 10 red peppers
* Salt to taste
* 5-6 garlic cloves, chopped well
* 2 spoons olive oil


What to de:

* Cut the peppers to slices and clean all the seeds
* Mix the peppers in a baking tray with the rest of the ingredients
* Bake in the oven for about 45 minutes or until soft, 350 degrees
* You may add 5 minutes in the grill to get a ‘tan’ look
* leave to cool for couple of minutes. Then peel the peppers
* In this point you will probably really like to eat the whole tray, but please wait a bit! Aftre couple of hours in the fridge the taste would be even better! But yes – some like it hot and that’s totally understandable….

You can eat it as a salad for itself or add to the mixed green.

Baked Sweet Potatoes

What you need:

* 5-6 sweet potatoes, peeled and chopped
* 2 spoons olive oil
* Salt to taste
* 2 tbs cinnamon

What to do:

* Mix all the ingredients and bake in the over for about 20-30 minutes or until soft (350 degrees).

After both peppers and sweet potatoes are ready, mix with the green mix and add the next dressing:

* 1 spoon olive oil
* Juice from 1 big fresh lemon (you can use ready made lemon juice, but it will never be the same)
* Salt and pepper to taste
